Mermaid diagrams in hex docs handle light and dark mode

Following up from #35

• Mermaid diagrams does not have a proper color change when selecting dark or light themes inside hexdocs.

It would be great to automatically change the diagram to dark mode if is the current selected theme in hexdocs.
