Pull request overview
Updates the organization profile README to reflect the AISViz → MAPS Lab rebrand, positioning MAPS Lab as the umbrella group and grouping AISViz and CiteForge as project lines, while updating contact and GitHub org links.
Changes:
- Replaces AISViz-centric org description with a MAPS Lab overview and updated framing.
- Reorganizes the Projects section into AISViz and CiteForge subsections.
- Updates repository links to
github.com/MAPS-Lab/*and changes contact email tomapslab@dal.ca.
