docs(install): drop the --no-quarantine Homebrew hint - #17

Homebrew 6 removed the flag, so the documented shortcut fails with "Error: invalid option: --no-quarantine". Keep Control-click Open as the first-launch step and use `xattr -dr com.apple.quarantine` for the damaged-app case, which applies to Homebrew installs too.
