Release sqlparser-rs version `0.61.0` around 2026-02-01

• Release sqlparser-rs version 0.60.0 around 2025-11-15 #2045

This ticket tracks creating the next sqlparser release (mostly so others can follow along)

Target Release Date: Approximately 2026-02-01 (2 months after the last release)

Steps:

• Tested with DataFusion: Upgrade to sqlparser 0.61.0 datafusion#20177
• Make a PR to update version / CHANGELOG.md: Prepare to release sqlparser 0.61.0 and sqlparser_derive 0.5.0 #2195
• Create a Release Candidate (RC) and start vote: https://lists.apache.org/thread/j98gs4zq1k2crv8mrr40hw6kgkxdqddx
• (When vote is approved) release to crates.io: https://crates.io/crates/sqlparser/0.61.0
• Make ticket for next release: Release sqlparser-rs version 0.62.0 around 2026-04-01 #2196

Bumping this up. Is there anything that I (as a non-maintainer and a new contributor) can do to help move it closer to a release? Perhaps the testing with datafusion?

Testing with DataFusion is a great idea. Thank you for bumping this -- it was not on my radar. I will put it on my list for this week
