change the tags used in Docker to have RC or something that marks them as definitely not approved releases

This is a blocker. ASF Incubator requires that tags for Docker images must be obviously RCs unless the tag is based on a voted release and Apache OpenServerless do not have any official releases.

Says

• Release candidates, nightlys or snapshots need to be clearly tagged.
• The latest tag should not point to an artifact containing unapproved code e.g. to master or dev branches or to a RC or snapshot.

You are also noncompliant by not including the Disclaimer in your overview page.

• The overview should include the incubator disclaimer.
