Its seems like a DELETE on the vec0 virtual table is not deleting the actual vector blobs in the %_vector_chunks00 table. In a scenario where documents need to get updated often this quickly leads to an overhead of multiple Gigabytes (depending on the dimension). After looking at the source it seems like there is no option to actually delete those blobs.
