Changes

Refreshed README.md's "Latest Version" column to match what Alpine edge actually ships:

PHP 8.7 is not added: php.watch still lists it as a "Future Release" with no version number (no alpha/beta/RC yet), and Alpine's edge/community and edge/testing APKINDEXes contain no php87 package at all.

• php86-redis is now published by Alpine (php86-pecl-redis provides php86-redis, confirmed in edge/testing's APKINDEX). However, the pre-release warning text in README.md and docs/security.md still lists redis among the extensions PHP 8.6 is missing — that wording is now stale and could be updated to drop redis from that list (leaving memcached and yaml, which Alpine still does not package for php86).
• php86-pecl-memcached and php86-pecl-yaml are still not published by Alpine — no change.
• PHP 8.3 moved from "Active support" to "Security fixes only" on php.net this month. Per the matrix rule, both statuses count as in-matrix, so no action was needed, but flagging the transition for awareness.
• No branch needs to be retired this cycle.
