I was reminded of Quarto in an episode of Code for Thought called "Publishing with Quarto" and learned that Quarto includes Typst, an alternative to LaTeX for rendering to PDF. There was a mention of Jupyter Book; Quarto can replace it too.
Without trying, I think we may be able to solve #10 and #11 with Quarto (with some additional configuration of course).
