chore: remove beta release workflows from development

Summary

Removes the 3 beta release workflow files that got merged into development as part of the v2-dev PR. Beta workflows belong on the v2-beta branch only — they have no business on development/main.

Deleted:

• release.yml — beta pipeline orchestrator (triggered on v2-beta)
• release-v2-beta-core.yml
• release-v2-beta-platform-plugins.yml

Remaining production workflows (untouched):

• release-production-pipeline.yml ✓
• release-production-core.yml ✓
• release-production-platform-plugins.yml ✓

Tags verified: all production publish steps use tag: latest ✓
