I know that the code for v1 is not in this repo. But I think having the changelog for v1 publicly available somewhere may help to respond to end user's questions. Is the changelog for v1 publicly documented anywhere else?
If the changelog for v1 is not publicly documented anywhere else I would keep it here.

Description
This PR reformats the changelog for increased readabilty. Also adds an "unreleased" header that contributors can update in advance of a release.
