Update attributes for AI integrations

We use a bunch of deprecated attributes in our AI integrations. We should update these.

The issue says 'a bunch' but doesn't name them. I found the specific ones in the repo:

• gen_ai.response.text and gen_ai.response.tool_calls — set in packages/core/src/tracing/{ai,openai,langchain,langgraph,google-genai,anthropic-ai,workers-ai}/. The workers-ai code already notes these are deprecated and only kept because Relay's migration to gen_ai.output.messages is lossy for tool calls.
• gen_ai.prompt — still emitted by packages/core/src/tracing/anthropic-ai/index.ts (deprecated in favor of gen_ai.input.messages).

That gives a concrete list of files to touch once the migration path is clear.
