Change the web app used to test SDK overhead

Problem Statement

Through #6503 we started testing https://googlechrome.github.io/devtools-samples/jank/ and measuring the SDK overhead.
Folks mentioned this is heavy in attribute manipulation but not as much in DOM mutations.

Solution Brainstorm

Have a site that's more representative of a 'real world' web app.

Use playwright's API to navigate around.
Make sure the replay is flushed out of the server (we now flush every 5 seconds #6761)

So after adding app sources to test-apps, a new implementation of the Scenario interface can be added and used in configs/ci/collect.ts. The run(browser: playwright.Browser, page: playwright.Page) command can do all the desired actions with playwright APIs.
All the metrics collection is done outside of that - no need to touch any of that code just to change the tested app.

We discussed this today and this will be needed to help with repro of some worst-case scenario apps. This will also serve as a regression test for performance
