docs: Update code block formatting

Why:

Closes: #34621

What's being changed (if available, include any code snippets, screenshots, or gifs):

Changes the language identifier of code blocks (which contain command output) from shell to bash and replaces > characters with # as suggested in the issue mentioned above.
