Build fails if hdf5 dependency was installed with vcpkg which provides hdf5::hdf5

The hdf5 vcpkg provides hdf5::hdf5 library target and not HDF5::HDF5 what HighFive expects: https://github.com/highfive-devs/highfive/blob/main/CMakeLists.txt#L114

With library aliasing the problem can be fixed, but it would be more convenient if HighFive would use the lower case library name, which does not require this workaround.

Thank you, I looked through the patches vcpkg applies to hdf5; and found nothing of interest. I also don't understand why this could happen. Therefore, I'm hesitant to change it without some more thought, because the "fix" might break other package managers that only have HDF5::HDF5 (assuming those exist).

@ldosdevel01-max do you know why this is happening?
