In #948 we stopped including payer_note and quantity in the Refund variant as we stopped persisting payment store records for inbound payments and LDK currently doesn't offer the fields via PaymentClaimable. See #948 (comment).

We should start setting them again after https://git.rust-bitcoin.org/lightningdevkit/rust-lightning/issues/4859 ships with LDK v0.4.
