Link out to docs site, emphasize minimal runs

With the docs site live https://docs.linuxserver.io/selkies/ I think this makes sense.

We link out to everything to the docs site, we emphasize super minimal run commands for no gpu, amd/intel gpu, and nvidia gpu is enabled.

With this structure the selkies blob should stay pretty static outside of some tweaks for the upcoming webrtc enabled release in the next version. This will also get the readmes back on dockerhub as the length is within limits.

You get minimal runs up front, then some light link outs and then our standard readme format. I tried to avoid multi line where possible to compress down the scroll to the full examples.
