OpenApiSchema System.Text.Json (De)Serialization

Default System.Text.Json Serialization of OpenApiJsonSchema is verbose (complete) and unsatisfying.

A simple way to fix it, probably via a JsonConverter, either by default or to configure on AddMVC json options.

In principle we have no objection to this kind of feature addition. There are questions around what serialization settings would be used by the converter. e.g. Do we only serialize in 3.1, or should it be possible to serialize in older formats?
Do we do this for all types or is this a special requirement for just OpenApiJsonSchema?

We don't currently have capacity to do this work at the moment, but if you would be interested in submitting a PR, we would be open to it.
