Hardening for the flow data-picker (#1973+).

Extracts the cursor-splice math from VariableTextInput into a pure insertToken helper and unit-tests it (and formatToken) directly — the picker's core UX contract, previously only exercised manually / in the browser:

bare CEL (record.amount) in expression fields vs {record.amount} in template fields;
append at caret, mid-string insert, selection-replace;
clamping a reversed or out-of-range selection so it can never corrupt the value.

Pure refactor — no behavior change; the DOM focus/caret restore stays in the component. pnpm build (tsc) clean; inspectors suite green (172).
