Update the version of Kaleido used in generating CI test images to v1.

Closes#7760.

Changes

• Update env set up script to use Kaleido v1
• Update make baseline script to use newer syntax
• Update baseline images that changed per Kaleido update
• Moved some mocks to flaky lists

Testing

• Check if the test baselines CI steps are passing

Notes

• This change will likely result in a number of baseline images having to be updated
• This is a second attempt at updating. The first was in Use kaleido v1 for image tests #7650. That was closed because it was out of sync with recent CI changes.

If the other failures are of a different nature entirely, it might make sense to list the old failures first, followed by the new ones, and add an explanatory comment
