[FEATURE] Point Analytics #154

Is your feature request related to a problem? Please describe.

It would be extremely interesting to track point differences day to day, and use that data to do analytics on users and their talking habits.

Describe the solution you have in mind

Ideally a new table should be created in the database, this table should contain the user id, point value, and a timestamp.
It should also have a retention period (# days) that's configurable in an environment variable. To keep the database from getting too big.
To demonstrate the feature, we could use a data analytics library to produce a small chart of the top 20 point earners and their point graphs.

Not really thought about it

Additional context

This is a larger feature that will require a database migration. We should ensure that that migration script also ships with this issue.
