fix: Update link to set-up-your-environment emitted by the CLI

Summary

This fixes some of the link that the CLI is outputting to users.
Specifically instead of pointing users to:

https://reactnative.dev/docs/environment-setup

we should point them to

https://reactnative.dev/docs/set-up-your-environment
